Celery soup - tasty and healthy
If you want to cook a celery soup, you need the following ingredients for the basic recipe:
- 1 - 2 tubers of celery (as appetizer 1, as main course 2 tubers)
- 1 - 2 shallots
- 500 - 750 ml broth (chicken broth or vegetable broth)
- 100 ml of cream
- 1 sprig of thyme
- 1 bay leaf
- some nutmeg

Cut the shallots and the peeled celery into small cubes. Then sauté the onions in a tablespoon of butter and then add the celery. Pour in the stock with the broth, then add thyme and the bay leaf. Let this mass simmer for about 15 minutes until the celery is soft.

When the celery reaches a soft consistency, you can remove the bay leaf and the thyme and puree the soup.
