There are the most diverse dishes that can be prepared with delicious chard. These include e.g. Mangold soup and Swiss chard pesto. Tasty but also tastes a mangold puff pastry quiche. This hearty cake tastes wonderfully spicy and yet is not too heavy. Especially the puff pastry makes here a very special charm. If you have water in your mouth then you should try the following recipe yourself.
Ingredients (for four people):
- 500 g of chard
- 2 tablespoons oil
- 50 g pine nuts
- 1 onion
- 200 ml of cream
- 4 eggs
- 100 ml of milk (1.5% fat content)
- 100 g mountain cheese
- 1 packet of puff pastry (round)
- 1 pinch of sugar
First of all, wash the chard, pick the leaves and cut into thin strips. Do not throw the stalks away! You can also use them. Just cut them into small cubes.
Peel and dice the onion. Then fry them together with the diced chard stalks, a pinch of sugar and 2 tablespoons of oil. Then add the chard strips and steam all together again. Now season with pepper, salt and nutmeg.
Roast the 50 g pine nuts in a fat-free pan and then add to the chard mixture. Then whisk together milk, cream and the eggs and stir in about 60 g of mountain cheese. Season everything together again with pepper, salt and nutmeg.
Now roll out the round puff pastry sheet to the desired size and place in a tart tin. Press lightly on the edges of the mold and cut off excess dough. Then distribute the chard mixture on the puff pastry. Pour over the prepared egg cream. Finally, there are still 40 g of mountain cheese in scattered form on top.
Preheat the oven to 200 degrees Celsius with top and bottom heat. Then bake the quiche on the bottom of the oven for about 10 minutes and then again for about 25 minutes on the bottom rail. Then leave the quiche in the oven until it has a golden brown surface.
