From May to the end of June the Black Elder blooms on roadsides, in parks and of course in many gardens. The large cream-white flower spikes emit an intense sweet scent, which not only magically attracts bees and bumblebees.

If you have a granddaughter in the family who loves cooking, you'll probably have tasted elderberry jam, elderberry blossoms baked out of dough, or even homemade elderflower syrup. The preparation is anything but a work of witchcraft - it can hardly go wrong and you achieve a delicious result in just a few steps.

Recipe: The ingredients for elderflower syrup

  • 20 to 30 flower spikes of black elder (Sambucus nigra)
  • 2 kg of sugar
  • 500 g organic lemons (a more fresh taste is achieved with limes)
  • 30 g of citric acid
  • 1.5 liters of water

Preparation of elderflower syrup

  • First, collect the flowers. Break open on a sunny morning and cut off only panicles with straight open, still fresh-looking flowers with scissors. The botanically correct name for the inflorescence is the way Schirmrispe - it is not an umbel, although it is read more often. The best way to transport the elder flowers is to breeze and loosely in a basket. Make sure that as little time as possible is left between harvesting and processing, as the flowers wither quickly
  • At home, gently shake each panicle to remove any insects from the flowers. Important: Do not flush the flowers with water. This would wash out the pollen, which are important flavor carriers
  • Separate the thick stems on the panicles, as they leave a bitter note in the syrup during later use
  • Now put the flowers in a pot. Then wash the lemons, cut into thin slices and add them as well
  • The water is boiled in a second pot together with the sugar and the citric acid. The sugar has to dissolve completely and with constant stirring. Then let the sugar water cool again
  • Pour the cooled sugar syrup over the flowers and lemon slices and stir gently. Then close the pot and leave it in the refrigerator for four days
  • After four days, the syrup is passed through a fine sieve, once boiled briefly and then bottled in the previously boiled bottles - the elderflower syrup is done

Elderberry is also an important medicinal plant. Its berries contain a lot of vitamin C and the juice is therefore often used to treat colds and fever. Holly preparations are also often used in fasting as they have a detoxifying and anti-inflammatory effect.
