Garlic can be prepared very differently and used in the kitchen. The fact that you can also smoke garlic, even many hobby chefs may be unknown. In Germany, this is indeed little known. The tradition comes from France. Here even garlic has been smoked for around 2000 years. A special specialty is, for example, the smoked garlic from the French town of Arleux, which you may even find in certain stores in Germany.
But you do not even have to go looking for it. You can easily smoke the garlic yourself. You do not even need a smokehouse.
The idea behind smoking garlic
Everybody knows that fresh garlic is not only very aromatic and that many dishes only taste the right taste, but that it also has many positive effects on your health. However, if you store it incorrectly or too long, it will not only start to germinate, it will also increasingly lose its valuable ingredients and develop a slightly bitter taste (reading tip: store garlic - so it stays fresh longer).
If you smoke the tubers cold or hot, not only will the garlic stay fresh longer, you will also be able to preserve the ingredients. In addition, the garlic can not germinate and change its taste. In some cases, you can even store the smoked garlic for up to 12 months! often even longer.
This is how the French smoke garlic
The people in the French Arleux harvest the garlic and tie it into pigtails. Then it is smoked cold over peat for a few weeks. That's how garlic gets its unique taste. In addition, he keeps his color in this way.
It all sounds a bit complicated at first, so the question of whether you can smoke your own garlic is entirely justified. Of course you can do that. With regard to the environment, you should rather refrain from smoking with peat.
So you can smoke garlic
Instead of peat, it is best to use smoking flour from specialist retailers. Of these, there are many different varieties that can give garlic a different flavor. So you can try several to find your personal favorite. Then to smoke the garlic, you have two options.
➯ Option 1 - to smoke garlic in the smoker / fireplace:
You can smoke the garlic either in the fireplace or in a special smoker. The hot smoking takes about 30 minutes. Then the cooked garlic is no longer germinable. After it has cooled completely, you can store it or process it directly. On the other hand, cold smoking takes about two to three hours.
➯ Option 2 - to smoke garlic in a saucepan:
If you do not have a smokehouse, you do not have to do without smoked garlic. You can also use a stew pot with a steamer for smoking. All you need is aluminum foil and smoking powder.
Put the garlic in place, turn on the stove and cap the pot as soon as the flour begins to smoke. Heat the garlic over medium heat for 30 minutes. Caution: If you smoke the garlic too long, it will get a bitter taste.
