To keep the tubers fresh for a few days after harvesting, place them in the fridge or in a cool location. You do not need to clean the fruit before storage - the soil protects the tuber from drying out.

Put sand in a bucket and sprinkle the harvested tuber with soil and roots into the sand. The tubers should be about five inches deep in the sand.
