- 1 kg organic apples
- a handful of sugar
- cold water
How to do it:
Cut the apples, shell and core into small pieces and place in a large bowl. Then the bowl is filled with water so that the water is about three centimeters above the apple mass.
Sprinkle the sugar over it and stir briefly. Then the bowl is covered with a clean (!) Kitchen towel and placed in a cool place. Stir the mass daily, so prevent mold growth.
After about a week, white foam forms. Then it is time to pour the broth through a kitchen towel and to pour into large glasses. You can dispose of the leftover apple porridge. Cover the glasses with some kitchen paper. Now put the filled glasses in a warm place (about 25 degrees Celsius).
After two to three weeks usually forms a so-called "vinegar mother". This is the name of the bacteria responsible for the fermentation of alcohol to vinegar. After about six weeks, you can bottle the cider vinegar. The well-sealed vinegar must now ripen for about 10 weeks in a cool place before it is ready for use.
