The olive oil tastes, as its name suggests, of fresh olives and is therefore one of the most popular herbs of the Mediterranean cuisine. Although the moderately hardy herb was unfortunately not able to gain much publicity with us. However, olive oil is generally used in the incense room to give meat and fish an even more delicate taste.

Grow the olive herb
The average up to 50 centimeters high growing olive herb should be planted in as full as possible and dry location. It is therefore also ideal for cultivation in a rock garden.
Especially in strong sunlight, the green-leaved olive herb develops a rather intense olive scent that spreads a pleasant aroma in the garden.
Maintain olive oil properly
The olive herb, often referred to as holy herb, is one of the easiest herbs in the garden and can even confidently remain outdoors in winter, if you protect it with a little brushwood or garden fleece.

You also need to regularly supply organic fertilizer to olive oil. This should be about every 4 to 6 weeks to work around the plant, which is also equal to the soil automatically loosened up again.
A complete pruning of the plant should always take place only in early spring, just before the start of their new growth. In autumn, on the other hand, you should only make a small shape cut each year, so that the natural foliage can protect the plant from winter frosts.
Harvesting olive oil
The olive herb looks very much like the cypress family, which is why its leaves are often mistakenly called needles. However, these are ideal for seasoning innumerable dishes (salads or soups, fish dishes and meat dishes).
Depending on the need for use, the individual stems are harvested. For the dishes themselves you can pluck the leaves. It also tastes as a topping on bread or cheese.
