❐ Basic recipe for peanuts in batter


  • 400 - 500 g peeled peanuts
  • 1 egg white
  • salt
  • a pinch of sugar

Place the peeled peanuts on a baking sheet covered with baking paper, making sure that they are not over each other. Only then can they brown or roast evenly. Then bake at 180° C top / bottom heat for about 20 minutes until golden brown. Then allow the finished peanuts to cool slightly, so that the dough coat keeps well.

As long as the nuts are in the oven, beat the egg whites until stiff and fold in the spices (eg curry, paprika, chilli powder or cayenne pepper). Then add the cooled peanuts to the egg whites and mix so that all the nuts are well wrapped. Then put the nuts back on the baking sheet and leave to brown in the oven until the cover is crispy brown. Turn the nuts from time to time and separate so that they do not stick together and become evenly brown.

  • 50 g of Parmesan, grated

In a larger bowl, mix the two types of flour, the salt, the icing sugar and the wasabi powder. Then add 3 tablespoons of cold water and 1 tablespoon of oil and mix to a thick mass. Then brush the baking paper with 1 tablespoon of oil.

Put the peanuts in the bowl with the wasabi-flour mixture and mix well with the mixture. Place the covered nuts on the baking sheet with the oiled baking paper (if possible so that they do not touch) and bake in a preheated oven at 150° C top / bottom heat for 10 to 15 minutes. Then allow to cool.
