Fruits and vegetables can be preserved in many ways. One of them is the awakening, also known as canning. This involves conserving food in glasses by heating them to completion of the air supply. The foods are also pasteurized and sterilized at the same time.
It may sound a bit strange at first, but you can also wake up potatoes to keep them longer. By briefly heating the tubers in the oven at 60 to 90 degrees germs are killed, but the taste and the consistency should remain largely intact. For that to be the case, you should follow the following tips when canning.
Tips for awakening
✔ Tip 1:
The preserving jars and their lids must be in perfect condition. In addition, no jumps may be present. Thoroughly clean the glasses with dishwashing detergent before awakening. Then place with the opening down on a clean dishcloth so that they can air dry.
✔ Tip 2:
The rubber rings must be flawless. If they are porous, they no longer seal reliably. In order to get them germ-free, they are immersed in vinegar water for about three minutes before cooking, which was previously brought to a boil.
✔ Tip 3:
While you put the potatoes in the glasses, the preserving jars should stand on a damp and warmed cloth. The glasses are filled so far that about two centimeters of space remain to the edge.
✔ Tip 4:
To ensure the tightness, the edge of the glass must be wiped off after filling. The rubber rings should be moistened before closing. For awakening, the water in the pot should cover only ¾ of the glass.
Instructions for awakening potatoes
Normally, potatoes can be stored in a cool and dark place for quite a long time. But you can also wake them up to keep them longer.
Peel the potatoes and then cook them in salted water for 10 minutes. During this time, the potatoes do not even and thus retain their strength. They are therefore only boiled, because raw potatoes are not suitable for canning.
While still hot, place the potatoes in the preserving jars and then pour two inches under the rim of the glass with the salt water.
Now the jars are tightly closed with the strap and placed in a water bath. In the oven or alternatively on the stove you can then heat the filled glasses for 90 minutes at 90 degrees.
If you want to consume the potatoes at some point, you only need to open the jar and heat it at 100 degrees for about 15 minutes in a water bath. Then you can eat them as boiled potatoes or even process them into fried potatoes or mashed potatoes.
