This is how you make elderberry juice yourself
When harvesting elderberries, it is important to wear gloves and old clothes: the coloring power of the berries is so strong that it is difficult to wash out stains. Important: Collect only umbels whose fruits are completely colored.
To make delicious elderberry juice yourself, put the picked elderflower in a pot and cover it completely with water. This way, you can also free the berries from small animals. Read the berries with a fork from the panicles. Use only the black, fully ripe berries. Optionally, sort out unripe berries. Now you can continue in two ways.

Make elderberry juice with the steam extractor
For two liters of juice you need about two kilograms of elderberries. You need 200 grams of sugar per liter.
- Fill the lower pot of the juicer with water and put the elderberries in its sieve. Place the steam juicer on the stove, bring the water to a boil and let the elderberries juice for about 50 minutes.
- About five minutes before closing, drain half a liter of juice. You give this over the berries, so that all the juice has the same concentration.
- Drain the elderberry juice completely and put it in a large pot. Now the sugar is added.
- Simmer the mixture with stirring for two to three minutes.
- Then fill the juice hot into sterile bottles and seal them airtight. The elderberry juice is now unopened for eight to ten months.
Make elderberry juice without steam extractor

Simmer the mixture for ten minutes until the berries burst
Pour the elderberry-water mixture through a sieve and catch the juice. Then put the berries in a clean dishcloth and squeeze out firmly. Important: Wear gloves so your hands do not turn red
Add 200 grams of sugar to every liter of juice collected. Then let the elderberry juice simmer with stirring for two to three minutes
Fill the still hot juice in boiled bottles and close them immediately airtight. Unopened, the elderberry juice is stable for eight to ten months
To refine your homemade elderberry juice
You can skilfully refine your home-made elderberry juice with other fruits and spices. So a lemon gives the juice a certain liveliness. For the amount of two kilograms of elderberries, squeeze the juice of a lemon and add it together with the sugar after juicing. Bring to a boil and pour hot. The combination of elderberry and lemon is also good for colds.
Grapes, pears and sweet apples are also great with elderberries. These are also a good supplement if you have not collected too many berries. You can arrange the ratio as you wish. Juice the fruits either separately or together as described above. Then process together with the sugar to juice.
Spices such as cinnamon or vanilla give your home-made elderberry juice a delicious aroma
Fine spices give your homemade elderberry juice a special kick. For example, add one stick of cinnamon, three cloves or the pith of a vanilla pod to the starting recipe. These are added together with the sugar in the elderberry and then boiled with the juice. Important: Remove the spices again before bottling the juice.
