Sugar peas are fresh only a few months a year to buy. That's why they like to freeze many. But can you do anything wrong?

Always blanch peas before freezing

Sugar peas belong to the particularly tender pea varieties, which botanically belong to the so-called pea family. These legumes are characterized primarily by their high sugar content, after which they are also called. Sugar peas are offered in the supermarket in shrink-wrapped packaging. Only at the weekly market, you can get the vegetables individually. If you want to freeze it, you should make sure when buying that the pods are juicy green and crisp. You can recognize the freshness, e.g. because the pods squeak when you rub them together. Not quite as fresh specimens, however, have mostly yellowish spots or spots.

So you freeze sugar peas properly

Usually you can keep fresh sugar peas for up to five days in the vegetable compartment of the refrigerator. Simply wrap the pods with a damp kitchen towel or place in a bag. However, if you want to have more of this vegetable longer, the pods can also freeze.

It is important that you clean the legumes before freezing and then blanch briefly. Dip the sugar peas in boiling water for three to five minutes and then quench with cold water. This has the advantage that the pods retain their green color. Then drain the sugar peas well and then place in a freezer bag or other suitable container and freeze. The sugar snap peas can be stored in the freezer for up to 24 months.

To thaw, simply pour the sugar peas into boiling water. Then you can use it, e.g. directly to sugar-bean soup process.
