Bread is baked in this country in a large amount of delicious varieties. For a party night, a zucchini bread can be a special treat.
Germany is regarded worldwide as the country with the most bread varieties. If you wanted to try the whole range of bread alone in its variety of herbs and different spices, they would take weeks.
Zucchini have long been no exception in the preparation of bread. You can easily incorporate this vegetable into the bread dough. Freshly baked, it is a delicious side dish to a hearty piece of grilled meat or a spicy salad.
Delightful zucchini bread from the box shape
- 2 small to medium sized zucchini
- 250 g flour
- 1 packet of dry yeast or half a cube of fresh yeast
- Salt pepper
- 200 ml vegetable broth
- 1 egg
- 4 tablespoons olive oil
- 1 teaspoon dried herbs, e.g. Oregano, basil
- 1 teaspoon of rosemary fresh and chopped
- 1 pinch of chilli flakes
- 250 g of feta, diced
1 Roughly grate the zucchini either by hand or with the food processor. Then they are simmered in the pan with a little butter for three minutes. Add salt and pepper and allow the steamed zucchini to cool slightly.
2 For the dough, mix flour with yeast and a pinch of sugar in a large bowl. Mix the vegetable broth with the egg, the herbs, the oil and the chili. Then pour this mixture to the flour in the bowl. Now the grated and steamed zucchini are added and stirred thoroughly.
3Finally, lift the feta cubes underneath and fill this dough into a greased and floured tin box. Spread the bread dough smooth and bake at 180° C (circulating air 160° C) for about 55 minutes until golden brown.
The finished zucchini bread is cooled on a wire rack. This bread tastes best fresh and goes well with salads, grilled meats and herb butter.
